And what the heck is that eye thing anyway?

It's called the "Eye of Providence" (or the all-seeing eye of God), a symbol with its origin in Christian iconography, showing an eye often surrounded by rays of light or a glory and usually enclosed by a triangle.

The symbol represents the eye of God watching over humanity (the concept of divine providence). In the modern era, a notable depiction of the eye is the reverse of the Great Seal of the United States, which appears on the United States one-dollar bill.

So, hopeful that this doesn't get any of us into trouble with the heavens, you might say that it represents the eye of the bourbon god watching over Kentucky.
